RISE bouillon cube to fight global malnutrition - Bill Gates tasted on CBS The Late Show

According to the UN, one third of the world's population is undernourished. In 2019, the Bill & Melinda Gates Foundation began investing in bouillon fortification efforts with the aim to reduce malnutrition. The work has now attracted international attention, as Bill Gates appeared on CBS The Late Show to sample a bouillon cube produced by RISE Research Institutes of Sweden and CSIRO (Australia).

- Many people in West Africa suffer from malnutrition, and the addition of vitamins and minerals to commonly consumed foods and condiments is one way to combat the problem. Since the consumption of bouillon is very high in the region, it is a suitable product to fortify. The bouillon cube that Bill Gates tasted has been produced in a joint project between CSIRO and RISE to investigate how the product is affected during storage in local climate conditions, says Tim Nielsen, project manager at RISE.

RISE has been involved in evaluating the broth during storage to ensure that the quality is maintained and that the nutrients are preserved at the desired levels. High temperature and humidity can lead to degradation of vitamins and change the color and texture of the broth.

- We mixed 10 different broth powders with different combinations of iron, zinc, vitamin A, vitamin B9, vitamin B12 and iodine. The powders were pressed into bouillon cubes and stored for 32 weeks at 30 and 40°C and 70% relative humidity. To ensure product quality, we carried out chemical analyses of vitamins and minerals, sensory analyses and color measurements, says Tim Nielsen.

Nutritional deficiencies can cause a number of serious health risks, such as stunted physical and cognitive development and increased risk of infections and metabolic disorders.

This project, funded by the Bill & Melinda Gates Foundation, has identified and tested innovative ways to develop a multi-fortified bouillon formulation that delivers measurable health benefits. Available and novel fortification techniques and ingredients have been evaluated with the goal of improving the stability of nutrients and reducing potential negative effects on the taste of bouillon cubes. Through collaboration between national research organizations, universities and industries, the project aims to reduce malnutrition in select countries.

- Together with our partners, RISE supports both start-ups and larger organizations to scale up their operations across multiple geographies and products. At RISE, we are dedicated to making a real difference. In the food sector, we do this with extensive expertise in product development, ingredient substitution, alternative protein sources, sensory analysis, vitamin and mineral fortification and new processing methods. We support food producers in lowering their costs while increasing the nutritional profile, to bring new, healthy and innovative food products to the market, says Henrik Bagewitz, Vice President at RISE.
