Within FINEST, seven master’s theses have been written concerning the wild berry and alternative proteins value chains. Now it is time to hear about their interesting findings.
On Tuesday 7 June, the focus is on the wild berry value chain. Felicia Wallden and Rebecca Markgren will take you through a comparison of the innovation systems surrounding wild berries in Finland and Sweden, discussing the factors shaping innovation activity in these countries and what Sweden could learn from its Finnish neighbours.
Looking beyond the Nordics you will hear about the global industry for bilberry bio-extraction from Qingyi Ning and Jiajing Yu, who will discuss the development of this lucrative industry and avenues for Sweden to become more active in this area.
Also looking at berry bio-extracts, Minglu Zou will give an overview of the strategies being used in the marketing of berry based health supplements around the world, discussing trends such as storytelling and influencer marketing, and how such strategies could be used to market berry based food and drink products.
Finally, Dorine AS and Emeline Calmet will present the results from an internship concerning the design of fermentation processes for juices containing Bilberries and Lingonberries.
On Wednesday 8 June, we will zoom in on the alternative proteins value chain. Sido Altenburg will give you a system perspective on the Swedish extraction of proteins from legumes and pinpoint some of the barriers to the growth and development of this market. He will portray the actors, networks, and institutions relevant to this system. Additionally, he will describe the knowledge development and diffusion, entrepreneurial experimentation and legitimation, and resource mobilisation that play an essential role in the system.
Additionally, the seminar will provide some unique insights into an Indian system perspective on legume production. Abhimanyu Harish and Ujjwal Muniraju will present the incentive-based system and policy-backed strategies implemented to promote legume farming in India. They will also share some noteworthy input on how Sweden could learn from the Indian system of legume production.
Finally, Ella Karlsson and Malin Rydén will present their research focusing on the scale-up process of food-tech start-up Mycorena; the unique circumstances of starting a business in the food industry, and the challenges related to business model innovation and the process of collaboration.
