Master's thesis recognised for high potential for positive environmental impact

Aaqifa Shaikh presented her master's thesis "Environmental Sustainability Assessment and a Comparative Analysis of Post-Treatments on Pea Protein Concentrate versus Isolate: A Case Study in Sweden and Denmark" during a closing event in Leuven, Belgium, in mid-October.
Supervisor has been Marta Bertolino, University of Turin, co-supervisors were Karin Östergren and Edoardo Desiderio, RISE.
During her time as a student (Master in Food Systems, coordinated by EIT Food), Aaquifa has focused on pea protein, which after extraction becomes powder of two types, isolate and concentrate, where the former has a high protein content (about 90 per cent) while the concentrate contains 50-70 per cent. Aaqifa has investigated which environmentally friendly post-treatment methods of protein concentrates can be used to mimic isolate quality, based on current knowledge.
A highlight of the event was the announcement of the winners of the Master Thesis Project Awards, which recognised the most outstanding projects in six different categories. Aaqifa's thesis won in the ‘High Potential for Positive Environmental Impact’ category.
