Design of fermentation processes Bilberry and Lingonberry juices

Dorine AS and Emeline Calmet are 4th year Food Engineering students at AgroSup Dijon in France. They joined FINEST as interns from March to July 2022. Their internships focus on the design of fermentation processes for juices containing Bilberries and Lingonberries.
Specifically, they will identify the starter cultures and operating conditions for achieving targeted final composition and stability of the berry juices. Their work will contribute to design beverages based on Swedish forest berries.
